Simple Arugula Salad
Ingredients:
Organic Arugula
Maui Onion
Kalamata Olives (Optional)
Freshly Shredded Cheese (Cheddar, Parmesan, any hard cheese, optional)
Olive Oil
Peach Balsamic (or any balsamic vinegar) or Lemon Juice
Lemon Zest
Salt
Directions:
Rinse arugula and cover with wet paper towels with thinly sliced Maui onion.
Place in fridge for at least one hour to crisp.
To serve, directly salt the greens, add olive oil and balsamic or lemon juice, toss and finally add cheese and olives (both optional).
This is a great, simple side salad for rich pastas or heavier meats; it's extremely versatile. It's fresh, peppery and sexy.
Add lemon zest for freshness.
For a heartier salad, I add a white shredded cheese such as Dubliner or a wonderful Parmesan.
