Butter Lettuce Salad with Mandarin Oranges
Ingredients:
1 Head Butter Lettuce
1/2 cup sliced almonds or *roasted almonds
1/4 cup sugar
1/2 cup vegetable oil
1/8 cup red wine vinegar
Salt and Pepper
6 Green Onion Tops
1 Can (22 Oz) Mandarin Orange Slices, drained and chilled
Directions:
Dressing (More than you need for this recipe)
Combine sugar, oil, vinegar, salt and pepper, refrigerate for at least one hour.
Salad:
Wash and dry lettuce.
Combine lettuce and scallions.
Toss with dressing.
Add oranges and toss again, top with almonds.
*Roasted almonds
Soak almonds in salt water for 2 hours, drain and dry (in sun or overnight).
Brown on stovetop, careful, will burn fast!
This is an absolutely delightful light salad that can be served with a heavier meal to balance it out.
