Tomato Cucumber Salad
Ingredients:
2 cups grape tomatoes, halved
1 tablespoon fresh lemon juice
1/4 cup chopped Parsley
Shaved Parmigiano-Reggiano cheese (optional)
Cucumbers
Thinly sliced onion
1 tbsp olive oil
Vinegar or lemon juice (to taste)
Salt and pepper
Directions:
In a bowl, toss the tomatoes, cucumber, onion, lemon juice (or vinegar) and parsley with 1 tablespoon of oil; season with salt and pepper. Garnish with the cheese, if desired. Serve immediately.
This salad is great with almost any dish. Use a mandolin to slice the cucumber to get it nice and thin.
