Cranberry Nut Relish

Ingredients:

1 pound Cranberries

2 cups sugar

Juice of one lemon

8 ounces orange marmalade

1 cup toasted broken up walnuts (optional)

Toasted coconut (optional)

Pinch of salt

Directions:

Mix cranberries, sugar, salt, lemon in Pyrex dish. Cover and bake at 350F for one hour.

Remove from oven and add marmalade and walnuts, if using; mix well.

Put into glass containers and store in fridge. Serve hot or cold.

Top with toasted coconut (optional).

Can be frozen as well, so I usually make enough for Christmas too!

For an easy and festive dessert, serve with a good quality vanilla bean ice cream and a Biscotti cookie on the side.
