Silky Split Pea Soup
Ingredients:
Large ham hock
Package of split peas
8-9 oz chicken broth
3/4 Maui Onion, chopped
6-8 cloves garlic, chopped
4 small dutch potatoes, peeled and diced
Salt & Pepper, to taste
Olive oil to sauté
Directions:
Clean and sort peas.
Sauté onion and garlic; do not burn.
Add ham hock.
Add peas, potatoes, and chicken broth.
Simmer 45 minutes to one hour.
Remove ham hock.
Place in blender until smooth or use an immersion blender.
Serve warm.
This is a lovely soup you may prepare in advance and warm up for ease of entertaining. I often use as an appetizer served in a small teacup with a cheese stick.
