Italian Meat Sauce
Ingredients:
Olive oil
4 onions (minced)
4 cloves garlic (minced)
2 pounds ground meat (beef, pork)
1/2 pound Italian sausage
1/2 cup minced parsley
4-28 ounce cans crushed tomatoes
2-8 ounce cans tomato sauce
1-6 ounce can tomato paste
1-2 hot peppers
Basil
Oregano
Salt (optional pepper)
1 pound mushrooms (sliced-optional)
1 cup dry red wine
1/2 cup grated Parmesan cheese
Directions:
In a large pot, heat a little olive oil and sauté onions and garlic.
When onions are soft, add meat and sauce.
When sausage and meat are no longer pink, add parsley, tomatoes, tomato sauce and paste and all seasonings.
Mix well, add mushrooms and let cook a few hours.
About a half hour before it is finished, add the dry red wine and grated Parmesan cheese. Stir well.
Tips: This is best if refrigerated overnight, then the fat congeals and you can remove it.
Makes enough for 2-4 pounds of pasta.
