Veal Pasta Sauce

Ingredients:

1 lb pasta

1-pound ground veal (you may ask your butcher to grind)

1 28 oz can crushed tomato sauce

1/2 onion (chopped)

2 carrots (chopped)

1 cup red wine

1 cup heavy cream

Parmesan cheese to taste

Fresh rosemary to taste (I like lots of it - adds so much feshness and flavor)

2-3 cloves minced garlic

Salt and pepper to taste

Directions:

Cook pasta al dente and set aside.

Sauté onion, carrots, and garlic in olive oil.

Add veal and cook through.

Add tomato sauce, red wine and cook for 3-5 minutes.

Add fresh rosemary, salt, pepper (to taste).

Add heavy cream.

Toss with pasta and cook for 1 minute, serve warm with Parmesan cheese.

The rosemary and cream in this dish make it an absolute winner. You could always try it with ground chicken, but the veal is super light and lovely.

This is a great date-night dinner with a simple arugula salad (see recipe) and a yummy dessert.
