White Bean Turkey Chili
Ingredients:
3 tbsp Olive oil
1 large sweet onion
6 cloves garlic, minced
2 serrano chilies, seeded and minced
4 TSP fresh rosemary, minced
1 1/2 tsp ground cumin
1TSP dried oregano
1/4 TSP cayenne pepper
Sea salt to taste
1 LB ground white meat turkey
5 cups chicken broth
1 can (15.5 OZ) Cannellini beans, rinsed and drained
1 can (15 oz) white hominy, rinsed and drained
Aromat by Knorr seasoning to taste (optional)
Roux to thicken, if needed. (to make a roux, melt butter and add flour in equal parts)
Directions:
In a large Dutch oven, heat over medium high. Add onion, cook 6-8 minutes. Add garlic and all other spices and cook 2 minutes. Add turkey and cook through. Add broth and beans and simmer until cooked well. Add roux if needed to thicken.
This is such a hit every time. It's a nice variation from traditional red chili and has a ton of flavor. Its great to serve a crowd and goes well with a nice warm slice of cornbread and butter.
