A’s Sausage Sauce or A’s Sausage and Roasted Chicken Sauce

Ingredients:

Olive oil

4 onions (minced)

6 cloves garlic (minced)

**3 pounds Italian sausage (sweet, hot or a combo)

4-28-ounce cans crushed tomatoes

2-8-ounce cans tomato sauce

1-6 ounce can tomato paste

Basil

Oregano

Salt and pepper

1 Cup dry red wine

1/2 Cup grated Parmesan cheese

Frozen petit peas (optional)

Directions:

Brown the sausages on all sides and set aside.

In a large pot, heat olive oil and sauté onions and garlic.

When onions are soft, add tomatoes, tomato sauce and paste and all seasonings.

Mix well, add sliced sausage and allow to cook for a few hours.

About a half hour before it is finished, add the dry red wine and grated Parmesan cheese.

Stir well.

Tip: If using the peas, add 10 minutes before the wine and cheese.

** If you want to add roasted chicken use the amount of sausage and add whole roasted chicken (shredded) to make it Sausage and Chicken sauce. Add the chicken when you add the wine and be careful not to toss the chicken too much as it will become too shredded

This is a very hearty dish that men PARTICULARLY love. It's especially good the next day.
