Blackened Salmon

Ingredients:

2-3 salmon fillets (skin removed)

1 tablespoon butter

For Tacos:

Shredded cabbage

Fresh lime

As Tartar sauce (see recipe)

Tortillas of choice

Cajun Spice:

1/2 tablespoon paprika

1/2 tablespoon salt

1/2 tablespoon onion salt

1/2 tablespoon garlic powder

1/2 tablespoon cayenne pepper

3/8 tablespoon black pepper

1/4 tablespoon thyme

1/4 tablespoon oregano

1/4 tablespoon sage

Directions:

Mix together spices in an airtight jar and shake until well blended.

Sprinkle Cajun spice liberally over salmon fillets on both sides.

Melt butter in a large pan over medium high heat until sizzling hot.

Place salmon fillets in butter and cook each side 4 minutes, depending on the size of the fillet. Be sure to cook one whole side before flipping to blacken properly.

I use *wild caught salmon. You may double the Cajun spice recipe and save for another time, store in airtight container. If you can find *Skuna Bay Salmon, by all means use it.
