Tuscan Panko Crusted Baked Chicken Tenders

Ingredients:

4 TBS Dijon Mustard

½ cup mayonnaise

½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 cup Panko

12 skinless, boneless chicken tenders

1 TBSP Lemon Juice

Lemon Zest of one lemon

Salt and Pepper

1 TBS Oregano

1 TBS Thyme (You may also use any Italian seasoning you like)


Directions:

Preheat oven to 425 degrees F (Convection).

In bowl, mix the mayonnaise, Parmesan cheese, garlic powder, mustard, salt, pepper, lemon zest and juice. Place Panko in a separate bowl and add Italian seasonings. Dip chicken into the mayonnaise mixture, then into the Pankco to coat.  Salt and pepper to taste. Arrange chicken on a baking sheet with a rack so the tenders won’t get soggy. Bake 15-20 minutes on a rack in the preheated oven, or until chicken juices run clear and coating is golden brown.
