Crostini Di Fegatini Al Vin Santo (Chicken Liver Crostini)

Ingredients:

500 grams chicken liver, approximately 17 oz

1 onion

2 carrots

1 piece of celery

2 sage leaves

12 oz white wine

12 oz Santo Vino

8 oz extra virgin olive oil

2 teaspoons of capers in vinegar

1 teaspoon of anchovy paste

Directions:

Sauté vegetables in olive oil. Add the sage, cook for 10 min on high, when the vegetables have a nice brown color (not burned) add the chicken livers (well washed and cleaned). When the livers are the same color as the vegetables, about 15 min, add the white wine and vino Santo to low fire and reduce the liquid by 2/3. Off the fire add salt and black pepper, capers and the anchovy paste. Mix in food processor 25- 30 seconds. Toast small slices of bread and serve with warm pate’.

Although you can buy prepared chicken liver or paté, this is super easy and it’s always nice to serve your family or guests anything homemade.
